Summer is the perfect time to dust off the BBQ and try out new dishes for the family, this recipe for dry rub BBQ chicken skewers is both easy to make and tastes amazing.
Although we are due some downpour in the next week or so, the UK is supposedly due another heatwave this month! So don’t put the barbecue away just yet.
There’s nothing better than chilling out in the garden on a hot summers day, sipping on a cold beverage and then popping on the BBQ to cook up some delicious food for yourself and the rest of the family. So, take a look at our recipe for dry rub BBQ chicken skewers and get ready for some sunshine!
Ingredients
- 1 Tbsp smoked paprika
- 2 tsp brown sugar
- 1 tsp celery salt
- 1 tsp garlic powder
- 1 tsp dry mustard
- ½ tsp black pepper
- 1 ½ tsp Kosher salt
- 2 boneless chicken breasts
- 3 Green peppers
- 3 Red Peppers
- 1 Red onion
- Skewers
Instructions
- To begin with, mix all of your BBQ seasoning ingredients together in a bowl.
- Dice up your chicken breasts into bite size squares and season them with the BBQ seasoning. Let this set for about 15 minutes. While you wait for the seasoning to set, chop the rest of your ingredients into chunky pieces.
- Preheat your grill to 400º Fahrenheit and lightly oil the grill grate.
- Start adding to your skewers and rotate the ingredients, adding on a piece of chicken, pepper then onion and repeating until you’ve filled up around two thirds of the skewer.
- Add your skewers to the grill and cook for 10-15 minutes, turning occasionally.
- Serve warm with corn on the cob and fries for a delicious BBQ meal!
And if the next heatwave doesn’t arrive, you can still enjoy these delicious Chicken Skewers indoors by popping them under the grill!
